Carmen’s Cha Cha Cha

While Guam has it’s fair share of restaurants – it’s not long of what I’d call good restaurants.

A good restaurant has ambience, fresh ingredients prepared well, and a courteous efficient staff.

Carmen’s Cha Cha Cha has all three.  Located in downtown Hagatna across from the basilica, Carmen’s is arguably one of the best restaurants on Guam.  Carmen is a real person, a chef who learned her craft in Mexico city.  She wanted to start a restaurant, and friends convinced her Guam needed a good Mexican restaurant – so she came.  http://www.carmenschachacha.com/main/index.php

We’re glad she did.  On the night we were there last, the place was full by 6:30 – and there was a wedding reception being held in the private room across the hall. 

I’m a stupid crazy traditionalist – I only eat one thing at a Mexican restaurant, and that’s cheese enchiladas.  Made poorly – they’re crap in a corn roll.  Made properly – they’re a delight.  When I ordered them ala carte, I had three choices – red, green or mole (mo-lay).  Mole sauce can be a wonder – the combination of peppers, spices and chocolate is an absolute exotic treat, and Carmen delivered.

The Pheebs ordered pescado,  which was mahi-mahi marinaded in lime and cilantro.  The fish came with homeade tortilla shells – chewy little buggers strong enough to hold a handful of fish and salsa without disintegrating like crappy storebought shells can.

The piece d’ resistance which made the meal?

A corona with a LIME!!!  It’s about damn time someone on the island figured this out!

Yep – this is one of the island’s best restaurants, and we made it out the door quite full for a little more than $40, including tip.  A deal at twice the price!

    I’ve just now had a chance to read all of the posts newer than the first one…moving and setting up have been a bit of a time suck. It looks like you two are having a great time and living enough for the rest of us! Keep it up! I’ll be in touch via email within a few days.

      So glad you read this; we’re in Singapore as of today. Have enough material for a month of posts on Tokyo and Singapore…will begin sorting thru shortly.

    I would have been envying you but I had a half way decent burrito opposite captain Tonys today. Quite a surprise to get Mexican food in Key West at last.

      Sorry for not responding sooner, we were caught up in the moment – anniversary and all. While I agree the new joint across from Tony’s is good – it’s still not great. Will be interesting to see if it lasts.
